Lemon Garlic Chicken Thighs Recipe
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon (juice and zest)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
- Optional: 1/2 teaspoon red pepper flakes for a bit of heat
Instructions:
- Prepare the Chicken:
- Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, oregano, and thyme.
- Zest and juice the lemon, keeping them separate.
- Sear the Chicken:
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken thighs, skin side down, and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Add the lemon juice and lemon zest to the skillet, stirring to combine. Let it simmer for 2-3 minutes.
- Combine and Cook:
- Return the chicken thighs to the skillet, skin side up. Spoon some of the sauce over the chicken.
- Reduce the heat to medium-low, cover the skillet, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish and Serve:
- Once the chicken is cooked, sprinkle with fresh parsley and, if desired, red pepper flakes for a bit of heat.
- Serve the lemon garlic chicken thighs hot, with a side of steamed vegetables or cauliflower rice.
