Garlic Lemon Sautéed Broccolini Recipe
Ingredients:
- 1 pound broccolini (trimmed and ends cut)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon (zest and juice)
- Salt and pepper to taste
- Optional: red pepper flakes for a bit of heat
- Optional: 2 tablespoons toasted pine nuts for extra crunch (sautee in olive oil until slightly browned)
Instructions:
- Blanch the Broccolini:
- Bring a large pot of salted water to a boil.
- Add the broccolini and blanch for 2-3 minutes until bright green and slightly tender.
- Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.
- Prepare the Garlic Lemon Sauce:
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the lemon zest and sauté for another 30 seconds.
- Sauté the Broccolini:
- Add the blanched broccolini to the skillet.
- Sauté for 3-4 minutes, tossing occasionally, until the broccolini is tender and coated with the garlic and lemon zest.
- Season with salt, pepper, and optional red pepper flakes to taste.
- Finish and Serve:
- Squeeze the juice of the lemon over the broccolini and toss to combine.
- If desired, sprinkle with toasted pine nuts or slivered almonds for added crunch.
- Serve immediately as a delicious side dish.
