As you may have noticed, I’m grain-free. I have been since the first trimester of my last pregnancy. Harlow is now 10 weeks old and I’ve never felt better. I really hate labels, and people always ask, or assume what box I’m supposed to fit into. Am I vegan, paleo, a raw foodist? The truth is I change as my body and it’s needs change, but right now I’m not eating grains and I don’t think I’ll go back. I’ll certainly never go back to gluten.
Change always seems daunting at first, and then you find things that work and keep life as simple and hassle-free as possible. Capello’s is one of those things that have helped make my life easier and has helped improve my health, as well as the kids. They have gnocchi, lasagna noodles, cookie dough, fettuccine, and pizza is coming soon.
Here are the ingredients for the lasagna: almond flour, cage-free eggs, tapioca flour, xanthan gum, sea salt. The ingredients are similar for all of their products. I know a lot of people who come to this site don’t eat eggs, so this wouldn’t work for you if you’re one of those people. But, for those of you who eat cage-free eggs, this is a great option. Cappello’s can be found in the frozen isle at Whole Foods and in other grocery stores. I’ve found it in the refrigerated section of other stores as well.
