Crepes are kind of a pain in the a** because you have to make them individually, but they look cool, and taste great, and these happen to be healthy as well. You can add any topping or filling (jam, chocolate hazelnut spread, fruit), but I really like whipped cream made with just coconut milk, and honey, or maple syrup.
Paleo (Grain Free) Crepes
Ingredients
- 1 cup almond flour
- 1/2 cup tapioca flour
- 1 cup non-dairy milk
- 2 eggs
- 2 tsp honey
- 1 tsp vanilla
Instructions
- Combine all the ingredients with a handheld mixer. The minute will be very thin.
- Use Ghee or Coconut oil to oil a 8 inch pan (there are non toxic options for non-stick).
- Fill about half a ladle, pour in the middle of the the pan and swirl to make a thin layer.
- Cook for just a few minutes on each side until golden brown. If it’s difficult to flip, you can use another larger pan, and use that to transfer the crepe back and forth to flip.
