Keto Non-Dairy Tiramisu Recipe
Ingredients:
For the Ladyfingers:
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup powdered erythritol
- 1 tsp baking powder
- 4 large eggs, separated
- 1/4 cup unsweetened coconut milk or cashew (you can use almond but I try to limit almond intake)
- 1 tsp vanilla extract
- Pinch of salt
For the Coffee Mixture:
- 1 cup strong brewed coffee, cooled – organic, mold free coffee! (Danger, or Purity)
- 2 tbsp rum or coffee liqueur (optional)
- 1 tbsp powdered allulose or erythritol
For the Cream Filling:
- 2 cans (13.5 oz each) full-fat coconut cream, chilled overnight
- 1/2 cup powdered allulose or erythritol
- 1 tsp vanilla extract
For Dusting:
- Unsweetened cocoa powder
Instructions:
Make the Ladyfingers:
- Preheat the oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the batter:
- In a large bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, and salt.
- In another bowl, beat the egg yolks with almond milk and vanilla extract until smooth.
- In a separate bowl, beat the egg whites until they form stiff peaks.
- Combine ingredients:
- Fold the egg yolk mixture into the dry ingredients until well combined.
- Gently fold in the beaten egg whites until just combined, being careful not to deflate them.
- Bake the ladyfingers:
- Transfer the batter to a piping bag and pipe ladyfinger shapes onto the prepared baking sheet.
- Bake for 10-12 minutes or until lightly golden. Let cool completely.
Make the Coffee Mixture:
- Combine coffee ingredients:
- In a shallow dish, mix the cooled coffee, rum or coffee liqueur (if using), and powdered erythritol until the erythritol is dissolved.
Make the Cream Filling:
- Prepare the cream:
- Scoop out the solidified coconut cream from the cans into a mixing bowl (discard or save the liquid for another use).
- Add the powdered erythritol and vanilla extract, then beat until smooth and creamy.
Assemble the Tiramisu:
- Layer the dessert:
- Dip each ladyfinger into the coffee mixture quickly to avoid soaking them too much.
- Lay a layer of dipped ladyfingers in the bottom of a serving dish.
- Spread half of the coconut cream mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining cream mixture.
- Chill:
- Cover the dish and refrigerate for at least 4 hours, or overnight for best results.
Serve:
- Dust with cocoa powder:
- Before serving, dust the top with unsweetened cocoa powder.
