No Bake Pumpkin Cookies

 

 

INGREDIENTS

1.5 cup [138 g] Chickpea Flour

1 tbsp [5.6 g] Pumpkin Pie Spice

1 Dash [1 g] Himalayan Pink Salt

0.5 cup [125 g] Almond Butter

0.33 cup [106.26 g] Maple Syrup

0.33 cup [8

2.5 g] Pumpkin Puree

1 tsp [4.2 g] Vanilla Extract

2 oz [56.7 g] White Chocolate (chips )

 

DIRECTIONS

1. In a large mixing bowl, combine chickpea flour,

pumpkin pie spice, and salt.

2. Add the almond butter, maple syrup, pumpkin

puree, and vanilla extract and mix until smooth.

3. Form small balls and place them on a parchment

lined baking sheet.

4. Press each ball into a circle shape and sprinkle with

chocolate chips.

5. Refrigerate for 30 minutes before serving.

6. Serve cold and enjoy!
