Lemon Garlic Chicken Thighs Recipe
Ingredients:

4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

4 cloves garlic, minced

1 lemon (juice and zest)

1 teaspoon dried oregano
-
1 teaspoon dried thyme
-
Salt and pepper to taste

1/2 cup chicken broth
-
1 tablespoon fresh parsley, chopped (optional, for garnish)

Optional: 1/2 teaspoon red pepper flakes for a bit of heat
Instructions:

Prepare the Chicken:

Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, oregano, and thyme.

Zest and juice the lemon, keeping them separate.

Sear the Chicken:

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

Add the chicken thighs, skin side down, and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

Make the Sauce:

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.

Add the lemon juice and lemon zest to the skillet, stirring to combine. Let it simmer for 2-3 minutes.

Combine and Cook:

Return the chicken thighs to the skillet, skin side up. Spoon some of the sauce over the chicken.

Reduce the heat to medium-low, cover the skillet, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Garnish and Serve:

Once the chicken is cooked, sprinkle with fresh parsley and, if desired, red pepper flakes for a bit of heat.
