Lemon Garlic Chicken Thighs

Lemon Garlic Chicken Thighs Recipe

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 lemon (juice and zest)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 1/2 cup chicken broth

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

  • Optional: 1/2 teaspoon red pepper flakes for a bit of heat

Instructions:

  1. Prepare the Chicken:

    • Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, oregano, and thyme.

    • Zest and juice the lemon, keeping them separate.

  2. Sear the Chicken:

    • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

    • Add the chicken thighs, skin side down, and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

  3. Make the Sauce:

    • In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.

    • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.

    • Add the lemon juice and lemon zest to the skillet, stirring to combine. Let it simmer for 2-3 minutes.

  4. Combine and Cook:

    • Return the chicken thighs to the skillet, skin side up. Spoon some of the sauce over the chicken.

    • Reduce the heat to medium-low, cover the skillet, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  5. Garnish and Serve:

    • Once the chicken is cooked, sprinkle with fresh parsley and, if desired, red pepper flakes for a bit of heat.

    • Serve the lemon garlic chicken thighs hot, with a side of steamed vegetables or cauliflower rice.
