Gluten-Free Avocado Toast with Poached Eggs

This isn’t my go-to, but rather an occasional weekend breakfast.

But I know people love avocado toast so I’m sharing how I make it – on occasion. 

My word of advice is to add 5 aminos for more protein, and a matcha or chai latte with collagen. eggs only have 6g of protein and we need 30-40g

I like Pacha bread and Happy cCmpers.

I love adding microgreens for liver detox and clearing out circulating estrogen.

Ingredients:

  • 2 slices gluten-free bread

  • 1 ripe avocado

  • 2 large eggs

  • 1 tbsp white vinegar (for poaching eggs)

  • Salt and pepper to taste

  • Red pepper flakes (optional)

  • Fresh herbs (such as chives, parsley, or cilantro), chopped (optional)

  • Lemon juice (optional)

Instructions:

  1. Toast the Bread:

    • Toast the gluten-free bread slices to your desired level of crispiness.

  2. Prepare the Avocado:

    • While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

    • Mash the avocado with a fork until it reaches your desired consistency.

    • Season with salt, pepper, and a squeeze of lemon juice if desired. Mix well.

  3. Poach the Eggs:

    • Fill a medium-sized pot with water and bring it to a gentle simmer over medium heat.

    • Add the white vinegar to the water.

    • Crack one egg into a small bowl or cup.

    • Using a spoon, create a gentle whirlpool in the water and carefully slide the egg into the center of the whirlpool.

    • Let the egg poach for about 3-4 minutes, or until the white is set, and the yolk is still runny.

    • Remove the egg with a slotted spoon and set it on a paper towel to drain.

    • Repeat with the second egg.

  4. Assemble the Avocado Toast:

    • Spread the mashed avocado evenly over the toasted gluten-free bread slices.

    • Place a poached egg on top of each slice.

  5. Garnish and Serve:

    • Season the poached eggs with a bit of salt and pepper.

    • Sprinkle red pepper flakes and fresh herbs on top, if desired.

    • Serve immediately and enjoy!

Tips:

  • Poaching Multiple Eggs: If you’re comfortable, you can poach both eggs at the same time, but be sure to maintain a gentle simmer and avoid overcrowding.

  • Alternative Cooking Method for Eggs: If poaching eggs is challenging, you can alternatively fry or scramble the eggs and place them on top of the avocado toast.

  • Additional Toppings: Feel free to add other toppings such as sliced tomatoes, radishes, or microgreens for extra flavor and texture.
