Chai Chia Pudding for Breakfast
This is an incredibly filling, and satisfying way to start your day. Pre-make the spice mix and save it for your Chai Lattes!
Ingredients:
1 cup coconut milk (canned or carton)
1/4 cup chia seeds
1 tablespoon chai spice mix (as per recipe below)
1 tablespoon nut butter (optional, for added creaminess and healthy fats; almond, cashew, or peanut butter work well)
1-2 scoops of Sexy Bones Collagen (optional, for added protein)
A pinch of salt
Optional toppings: sliced almonds, coconut flakes, or fresh fruit
Instructions:
1. Prepare the Chai Spice Coconut Milk:
In a mixing bowl or jar, combine the coconut milk with the chai spice mix.
If using nut butter, you can mix it in at this stage for a creamier texture.
Whisk or stir well to combine the spices and nut butter thoroughly.
2. Combine with Chia Seeds: - Add the chia seeds and a pinch of salt to the coconut milk mixture.
If you’re using collagen, add it now as well.
Stir well to ensure the chia seeds are evenly distributed and not clumping together.
3. Let it Sit: - Allow the mixture to sit for about 5 minutes, then stir again to prevent the chia seeds from settling at the bottom.
4. Refrigerate: - Cover the bowl or seal the jar and place it in the refrigerator.
Let it sit overnight (or for at least 4 hours) to allow the chia seeds to absorb the liquid and thicken.
5. Serve: - In the morning, give the pudding a good stir.
If it’s too thick for your liking, you can add a little more coconut milk to reach your desired consistency.
6. Add Toppings: - Top with your choice of toppings such as sliced almonds, coconut flakes, or fresh fruit.
7. Enjoy: - Enjoy your chai spice coconut chia pudding as a nutritious and flavorful breakfast or snack!
CHAI SPICE MIX:
2 TABLESPOONS GROUND CINNAMON TEASPOON GROUND CLOVES
¾ TEASPOON GROUND NUTMEG
This recipe is quite versatile, so feel free to adjust the spice levels to suit your taste. You can also use different types of nut milk if you prefer, but coconut milk will give it a rich and creamy texture.
