This recipe is similar to my raw mousse recipe, but with a few changes that I have found make it more of a pudding, and more kid friendly.
I don’t tell people avocado is the primary ingredient until after they try it and love it.
In addition to heart healthy avocado, cacao is a powerful antioxidant, and two tablespoons have 45% the daily recommended serving of iron.
The pudding can be served immediately, but it’s best chilled for at least an hour.
Raw Chocolate Pudding
Ingredients
- 3 avocados (pitted)
- 2/3 cup cacao powder
- 1/2 cup coconut nectar
- 1/4 cup water
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp sea salt
Instructions
- Put all the ingredients in a blender (I use the Vita-Mix), and chill in the refrigerator (if you can wait that long!)
