It’s well worth it, especially is you’re just starting out eating raw or vegan, or thinking about it. It can all seem very overwhelming, but Deb does a great job with simplifying things. If you’ve been at it for a while, she can offer inspiration, and twists on things you may already be making.
This is a totally raw, completely healthy recipe, and let me tell you, it’s now replacing my current go-to pumpkin pie recipe.

CRUST
1½ c. pecans
4 dates, pits removed
1 T maple syrup
Celtic sea salt or pink Himalayan salt to taste
Pulse ingredients in food processor until nuts are coarsely chopped.
Mix until desired consistency (about 1 minute).
Press into 8” glass pie plate.
FILLING
1/3 c. carrot juice
½ c. cashews, soaked in water for at least 4 hours
½ c. coconut oil
1/3 c. maple syrup
1/3 c. coconut nectar
1½ t. cinnamon
Blend in high-speed blender until smooth (1-2 minutes).
Pour into crust.
Freeze until set.
Use grade B maple syrup because it has a higher mineral content so it’s more nutritious.
Whipped Cream
BASIC RECIPE
1 c. cashews, soaked in water for at least an hour
¼ c. coconut oil
¼ c. water
2 T Ultimate Sweetener xylitol
Celtic sea salt or pink Himalayan salt to taste
Mix all ingredients in high-speed blender until smooth (1-2 minutes).
Add more water if necessary to achieve desired consistency.
Nutritional notes:
Xylitol is typically derived from corn which contains high levels of mycotoxins & fungi & is often genetically modified. But the Ultimate Sweetener brand is a clean form of xylitol. It is made from birch trees & is a natural by-product of making paper.
