Making almond milk has become my nemesis.
It really doesn’t take that long, but it’s just one more thing on my long list to do. First, you need to soak the nuts to remove the lectins because they inhibits nutrient absorption.
Most of the non dairy milk on the market is not organic, they are not soaked (AKA sprouted), they have preservatives, gum additives (which disrupt gut flora, leading to gut issues, bloating etc.)
Today I was elated to find Sprouted Organic Almond MALK! It has the same ingredients I use in my own milk; organic sprouted almonds, water, sea salt. It even has 5 grams of protein per cup. Most of the other non dairy milks only have between zero and one gram. They sell it at many Whole Foods, but you can check out their website to find other stores. Even the sweetened varieties have only vanilla beans, and maple syrup. I’ll still make my own, but it’s nice to know I don’t have to all the time!
